Operation Clear Out the Cupboards Soup Recipe

One thing about taking an unplanned for holiday, is that it impacts on the budget, so this week, I’ve been carrying out operation clear out the cupboards, and the fridge and freezer.  It’s a great excuse to use up all those things lurking in the back and might never see the light of day, until they’re out of date by a year or two.  I can’t be the only one who finds things like that……

My first port of call was the freezer, for all those half or nearly empty bags of frozen stuff that I keep in reserve to add to other dishes.   Out came the frozen bags of butternut squash, sweet potato, carrots, onion and peas.  I have a fridge drawer full of cucumbers the man grew, and loads of tatties from the plot, so it was easy to make a lovely big pot of soup.

It’s not the prettiest soup in the world, but it filled a fair few bellies a couple of times over.  What can you make from the depths of your cupboard or freezer?

Clear Out the Freezer Soup Recipe

Ingredients
  

  • 500 g Butternut Squash cubed.
  • 500 g Potatoes peeled and cubed.
  • 180 g Onions finely chopped.
  • 200 g Cucumber peeled and cubed.
  • 250 g Leek washed and chopped.
  • 100 g Carrot sliced.
  • 200 g Petit Pois.
  • 2.4 Litres Water. 1,75 kettles full for me
  • 4 Vegetable Stock Cubes.
  • 1 Tablespoon Marmite.
  • Salt and Pepper to taste.

Instructions
 

  • Add all the ingredients to the pot. Many were frozen, and if I'd had more time, I'd have given the onions and leek a quick fry first, but on this occasion, I just lumped them all into a big pot.

  • Top up with your water, to above the level of your vegetables. You can add more water later if you need to, and some salt and pepper.

  • Stir well, and bring to the boil, then simmer gently until the vegetables are cooked.

  • Use a potato masher to mash down some of the vegetables, to thicken the soup slightly, but still leave enough to give the soup some body.

  • Add the frozen peas, and when they're completely defrosted and heated, your soup is cooked.

Ingredients
  

  • 350 g Sweet Potato peeled and chopped.
  • 200 g Onion peeled and chopped.
  • 100 ml Cream or Milk.
  • 400 g Tin Plum Tomatoes.
  • 2 Knorr Chicken Stock Cubes.
  • Salt and Pepper to taste.
  • 1 Level Teaspoon Ground Ginger.
  • 1 Clove Garlic crushed.
  • 1 Teaspoon Butter.
  • Water.

Instructions
 

  • Method A

  • Add all ingredients to the pot, crumbling the stock cube in, and stir well.

  • Top up with water to below the maximum fill level and above the minimum fill level on a 1.6litre soup maker.

  • Make sure the lid is on tight.

  • Select the smooth setting.



  • Method B

  • Saute the onions, ginger and garlic in butter.

  • Add the rest of the ingredients to the pot, crumbling the stock cube in, and stir well.

  • Top up with water to below the maximum fill level and above the minimum fill level on a 1.6litre soup maker.

  • Make sure the lid is on tight.

  • Select the smooth setting.

Soupmaker Recipe: Sweet Spud and Chilli Tomato

This is a veritable taste bud smacking flavour.  You must like the sweetness of sweet potato, and the chilli flavour that tempers it.  If you just want a very sweet soup, simply leave out the chilli, or add some cream to make it even richer, but I suspect that would be too much for me.

Ingredients
  

  • 450 g Sweet Potato peeled and cubed.
  • 2 x 400g Tins Chopped Tomatoes
  • 200 ml Semi Skimmed Milk
  • 2 x Vegetable Stock Cubes
  • 1 Chilli seed removed, chopped finely.
  • Water.
  • Salt and Pepper to taste.

Instructions
 

  • I used zero onions, as I wanted the sweet chlli type flavour from my soup.

  • Add all your ingredients to the soupmaker.

  • Top up with water, to above the minimum and below the maximum levels.

  • Crumble the stock cubes over the top, and mix well with a wooden spoon.

  • Make sure your lid in on properly.

  • Choose the smooth setting. I put this through my soupmaker twice. I did one cycle, then gave the soup a good stir before putting it on again. You can judge it by the results you get on your own version. I found it quite thick. I'd even be tempted to leave out one tin of chopped tomatoes in future, and add it for a second chunky setting for a more lumpy style soup, but I don't yet know if that would take my ingredients below the minimum line. I'll have to try it.

Soup Maker Recipe: Asparagus Tips with Aubergine

I haven’t added a soup maker recipe to this blog for a while, so it’s long overdue.

I didn’t sauté any of the ingredients on this soup, but if you prefer that, give the onion a quick fry with some butter or rapeseed oil.

I find that olive oil reaches smoke point too quickly for me to use in my soup maker on the sauté function.

Ingredients
  

  • 300 g Asparagus Tips chopped.
  • 130 g Aubergine peeled and chopped.
  • 200 g Red Potatoes peeled and chopped.
  • 100 grams onion chopped.
  • 2 Knorr Chicken or Vegetable Stock Cubes.
  • 40 g Sundried Tomato Paste
  • 1 Teaspoon Salt
  • 1 Teaspoon Ground Black Pepper.

Instructions
 

  • Work quickly with Aubergine as it discolours fast.

  • I just added all the ingredients to my soupmaker.

  • Fill the soupmaker to the maximum level with water, making sure it fills above your minimum and below your maximum level.

  • Ensure the lid is on properly.

  • Choose the smooth setting for your soup. If you make it in a pot, simply cook the soup and use a blender to smooth.

Soupmaker Recipe & Pot: Vegetarian Haggis Soup

I do like the taste of vegetarian haggis and my mother has managed to decide she’s now off meat for life (apart from bacon sarnies).  I didn’t want to make different soups for us all, so this is just a lovely little mish mash that came out tasting great.

Give it a go, and add your own flavour and spices to make it your own, but do remember that vegetarian haggis will be fairly spicy as it is.  For my mother to enjoy it, I have to add some cream at the serving stage.  The chunky version is a little like a meal in a bowl for those of you who love great soup, with good taste, and still be able to have what feels like real food rather than just soup.

This is a firm favourite of mine, so I wish I could tolerate oats better.  I can still get away with one small bowlful though.  You can make this in a pot too, it just takes a lot of watching over, so that the haggis doesn’t stick to the bottom of the pan.

Vegetarian Haggis Soup in a Soupmaker

Ingredients
  

  • 180 g Chopped Onion
  • 150 g Sliced Carrot
  • 150 g Potatoes Peeled and Cut Into Thin Strips
  • 320 g Sliced Vegetarian Haggis I used MacSween
  • 1 Garlic Clove Sliced or Crushed
  • Vegetable Stock
  • Salt and Pepper to Taste
  • Teaspoon Olive Oil

Instructions
 

  • Saute your onions in the oil, then add a little of your stock and let it simmer for five minutes, adding in your garlic, with a touch of salt and pepper. Not too much, as your haggis will be full of spices.

  • Add all the other ingredients and fill with stock, to above the minimum level and below the maximum level of your soupmaker. I added approximately 700ml to my maximum level.

  • Select the chunky setting.

Soup Maker Recipe: Asparagus and Spring Onion Soup

I wanted something slightly different for my mum and asparagus is one vegetable I have tended to avoid fairly often, but it’s also a good one for us to eat, so I’ve started experimenting.

This came out quite thick, so I added a little milk at the serving stage for her, and she loved it.

This is my mum’s favourite recipe. She’s not usually keen on garlic, so it was a bit of a surprise to find that she likes this. I make it often and freeze some for her lunches.

  • 350 g Potatoes Chopped

  • 800 ml Chicken or Vegetable Stock or up to the max on your soupmaker
  • 1 Teaspoon Finely Chopped Parsley

Instructions
 

  • Saute the onions and garlic with the olive oil, until the onions are soft.
  • Add the rest of the ingredients.
  • Stir Well.
  • Choose the smooth setting.
  • When the soup is ready, stir through the finely chopped parsley.

  • 1 teaspoon Cardamom Powder
  • 1 teaspoon Olive Oil

Instructions
 

  • Lightly saute the onions and cardamom with a pinch of salt and pepper, in the olive oil.

  • Add all the ingredients to the soup maker and stir very well.Choose the smooth setting for a thick soup.

  • Season with other herbs or spices if you'd like a stronger taste.

How to make stock in a Soup Maker

We’re all put off making stock on occasion, by the sheer need to be around as the pot simmers those old bones and bits left over from any roast we’ve had for dinner, but there is another way.

Determined to use my Soup Maker to its full extent, I tried making stock as a test, to see if it was really possible to do.  Any soups always taste fabulous with fresh stock, so it’s a no brainer for me.  I put the carcass or bones into a pot as soon as it’s cooked, so that I can freeze any leftovers for another day.  I don’t let it cool, as I’ve always lived by the rule of only one reheat after meat is cooked.

It’s fairly simple.  I add nothing as I prefer to add my extra ingredients at the cooking stage, but you could add different options.

Ingredients:  Carcass, Bones or Leftover Meat

Optional:  

– Salt & Pepper

– Stock Pot

– Garlic

– Onions etc

Add any bones, or chopped up pieces of leftover meat to your soup maker.  You do need to ensure there is enough room to put on your lid if you use a kettle version.

Method:

Step 1

Add your ingredients to the soup maker, choose the chunky option and run through the cycle.

Step 2

Chicken Stock 1

If you like your stock to be stronger, run it through a second cycle.

Step 3

Sieve your liquid, to separate the bones & meat from the liquid stock, and now it’s ready for use.  You can freeze the stock if it’s freshly made, but if you’ve let the meat or the carcass cool, I’d use it straight away.

Ingredients
  

  • 500 g Mixed Vegetables I used Potatoes, Carrot and Turnip
  • 50 g Lentils
  • 1 clove Garlic
  • 1 teaspoon Cinnamon Spice
  • 1 Stock Pot
  • 1 pinch Salt
  • 1 pinch Pepper
  • 800 ml Vegetable Stock

Instructions
 

  • As simple as can be. Just throw all your ingredients into the pot.

  • Set your soup maker to the smooth setting. As this soup cools, it will thicken a fair bit. It depends if you'd rather make it and eat it fresh, or wait until it has thickened and then re-heat it.

  • Season with other herbs or spices if you'd like a stronger taste.

Soup Maker Recipe: Cream of Aubergine and Butter Bean Soup

Keeping Aubergine Soup simple isn’t as easy as it looks.  The sponge like texture ensures you need to work fast, or it may discolour more quickly than you expect.  Leave peeling your Aubergines till last (or Egg Plants for those across the water).

For this version, I wanted to make it without much preparation, so I went for a can of butter beans that was in my cupboard and fast approaching its sell by date.  It’s as good an excuse to make up a soup as any.  Finished with pink peppercorns on the top, this looked lovely on the table.

Ingredients
  

  • 500 g Aubergine Egg Plant (Cut into smallish cubes)
  • 200 g Butter Beans
  • 1 Vegetable Stock Pot
  • 1 Herb Flavour Pot
  • 150 ml Fresh Cream (Single or Double)
  • 700 ml Boiling Water Approximately ((or up to your maximum fill level - it could be less than this due to springiness of the Aubergine))

Instructions
 

  • As simple as it can be. Just add all the ingredients to the pot, choose your setting and put your feet up for around 20 - 30 minutes..
  • Be careful with liquid here. You can only fill your maker to its maximum fill lever, which could be less than the ingredients in my recipe needed. Check your appliance. Aubergine soaks up liquid like a sponge, so you need to be extra careful.
  • For this version, I first selected the chunky option, to ensure there was no explosion if the Aubergine swelled up when boiled. Thankfully, it all worked out fine and I could blend it afterwards. You know your own soupmaker, so choose the option that suits you.
