Soup Maker Recipe: Leek, Potato and Garlic Soup

This is my mum’s favourite recipe. She’s not usually keen on garlic, so it was a bit of a surprise to find that she likes this. I make it often and freeze some for her lunches.

Soup Maker Recipe: Leek, Potato and Garlic Soup

Ingredients
  

  • 350 g Potatoes Chopped
  • 350 g Leeks Chopped
  • 100 g Onion Finely Chopped
  • 2 Cloves Garlic Chopped
  • 1 Teaspoon Olive Oil
  • 800 ml Chicken or Vegetable Stock or up to the max on your soupmaker
  • 1 Teaspoon Finely Chopped Parsley

Instructions
 

  • Saute the onions and garlic with the olive oil, until the onions are soft.
  • Add the rest of the ingredients.
  • Stir Well.
  • Choose the smooth setting.
  • When the soup is ready, stir through the finely chopped parsley.

    I have a morphy Richards soup maker without the sauté option, would I need to sauté on the hob first or just bung it all in the soup maker?

      You can choose to saute some ingredients, which will bring out the flavours more, but you can indeed just bung it all into the soupmaker. You’ll still have great soups. Before my last soup maker died, and I got one that also saute’s, I mostly just used to throw everything in.

    looks great, gonna try tonight. nights fair drawing in ! clocks changed, getting colder.nothing better than soup, altho i love it all year round. got leeks and potatoes reduced today at tesco, woohoo! will let you know how it goes x

    this sounds lovely, I like leek and potato soup but it can be bland, I imagine the garlic gives it a great flavour!
