Soup Maker Recipe: Carrot and Coriander Soup

This is a luxurious and tasty, not to mention creamy soup, intended for soupmakers up to 1.6 litres.

If you think it may be too rich for you, replace the cream with more boiling water or stock and away you go with the low calorie version.

Soup Maker Recipe: Carrot and Coriander Soup

Course Soup

Ingredients
  

  • 1 teaspoon Olive Oil
  • 200 ml Fresh Cream
  • 1 teaspoon Ground Coriander
  • 800 ml Boiling Water
  • 1 Stock Pot Vegetable or Chicken
  • 600 g Carrots Peeled and Sliced or Chopped
  • 75 g Onion Chopped
  • 75 g Potatoes Sliced

Instructions
 

  • Saute the onions in the olive oil, adding your stock pot as the onions soften.
  • In the pot, add your onion mix, and the rest of your ingredients. Make sure to stir well before switching it on. It really does help to avoid soup sticking to the base of your soup maker if you don't have a non stick surface.
  • Select the smooth function for this option.
  • Serve with croutons.

  1. Hi can this soup be frozen if I use cream in it? Thank you for all the lovely recipes. I have only just come across your site and think it is great. I have had a Morphy Richards soup maker for 3 years and use it a lot.

    1. Sorry Brenda. A bit late in replying. I tend not to freeze soup with dairy in it. It does freeze, but for me, it changes the texture of the soup once defrosted and heated up. I tend to leave cream out until the serving stage if I intend to freeze.

  5. Am I right in assuming that the onions are sauted in a separate pan and then added to the soup maker? I am new at this game so please bear with me.

    1. Hi Brian

      It depends on the machine you have. Mine has the saute function in the soup maker so I can do it all in one pot. If you don’t have that, a separate pan is fine, but sauteeing the onions is an option to increase the flavours, but it isn’t something you must do for soup.

  6. Do I include the fresh cream in the cooking of the soup or add it later

  7. I use 1 vegetable oxo cube as an alternative to the stock pot. Then instead of cream I use low fat creme fraiche. Soup comes out superb every time!!

    1. Yum. I often use stock cubes in day to day soups, as I tend to make soup every day for my mum, as it’s one of the few things she’ll eat. I guess that’s why I build up so many recipes as she gets bored of the same ones over and over again. I’ve not used creme fraiche for a while, but it is fab in place of cream. Glad you’re enjoying it.

    Whilst waiting for my Morphy Richards soup maker to arrive, I searched the internet and came across your site and read all the receipes with lots of enthusiasm. My machine finally arrived at work and I got cracking straight away with this receipe. Delicious!
    Three weeks since my soup maker arrived and I’m hooked. Everyday I cook a different receipe and freeze what is left over.

    I would NEVER buy tinned again!!!!

  9. My new soup maker arrived today, I didn’t have any corriander or cream so I made carrot soup and used full fat milk instead of cream and a chicken oxo. Tasted lovely.

  10. Hi Scottish mumI love your soup recipes. I recently bought a Morphy Richards soup maker and your recipes are perfect to make soups with it.1 quick question – can I use stock cubes instead of stock pots you mention in your recipes? what is the difference? is 1 stock cube

    1. Is 1 stock cube = 1 stock pot?
      And I do not like to add cream in my soups. Is there an alternative?

      1. i use qwark but i put it in at the end and melt it in x
