Soup Maker Recipe: Cream of Potato and Leek Soup 1.6 Litres

Potato and leek soup is so simple to make that it’s in the pot and cooking in just a few minutes in the soup maker.  I rarely bother with exotic spices and herbs for basic vegetable soups and as this one has cream in it, it isn’t suitable for freezing.  Leave out the cream and add water as a substitute if you plan to freeze.

Ingredients
  

  • 500 g Potatoes Peeled and Chopped
  • 200 g Leek Chopped
  • 100 g Onion Chopped
  • pinch Salt
  • pinch Pepper
  • 100 ml Fresh Cream
  • 700 ml Boiling Water Or fill soupmaker up to 1600ml mark on kettle.
  • 1 Vegetable Stock Cube Crumbled

Instructions
 

  • Pop all the ingredients into the kettle. Set to smooth setting.
  • Simmer for 21 minutes in the kettle. If you make the soup manually, you will have to blend it after cooking.
  • Serve with fresh bread and parsley.

  1. I have made this soup a number of times. Although I don’t use cream to make the soup to make it healthier. My family has always loved this recipe.
    It’s so easy to make. I love making it. Thank you very much for posting such wonderful recipes.

  2. I freeze soups with cream in all the time.

    All that happens is the cream separates out when you defrost it which initially looks revolting, but to fix simply reheat in a pan on the stove, stirring regularly and it all recombines nicely.

    Some people say you lose a bit of flavour, and perhaps it’s marginally not as nice as freshly made soup, but imo it loses no more quality than any other frozen meal.

    1. For sure, people have different tolerances of what food looks like after defrosting. I agree a reheat helps, but some soups just don’t work well with cream and being frozen. As cream is usually the last ingredient in cooking, I just find it easier to remove doubt and freeze it. Much easier to persuade my kids to use frozen soup if it heats without the curdled look.

    1. Hi Marsha. Use proportions, ie fractions. I don’t know the capacity of the compact morphy richards.

    I did add an extra veg stock cube but everything else was as the recipe says.

  6. Just wanted to say this is the best soup I have ever made! I was given a Morphy Richards soup maker for Christmas and I tried the leek and potato soup recipe, the only thing I changed was I had two leeks so this increased the amount of leeks and I love all purpose seasoning so I used a teaspoon instead of salt and pepper. I was so surprised how much taste this soup had when it seemed so simple to make, I do feel like I am cheating! We took a flask to the park with us to fuel the Pokemon hunting and it was delicious.     1. Soup is great for that. With the soupmaker, it does seem very easy to make fabulous soup. I sometimes cheat with bought stock too, for added flavour.

        Your leek and potato soup is the first I’ve made I’m the soup maker and its delicious.
        I would like to make your sweet potato and tomato soup next but not sure if the water to add is cold or boiling as the leek and potato recipe.

  7. Hi Scottish mum I’ve just purchased a morphy Richards soup maker put all the normal ingredients in that I alway use for vegetable soup but it came out tasteless any idea why

  8. I have just treated myself to the morphy Richards soupmaker and am going to try some of your recioes which look lovely, is there an alternative you can use for the fresh cream ??

    1. The beauty of making soup is that you can use anything. Lots of people substitute creme fraiche, skimmed milk, soft cheese, yoghurt etc, but I wouldn’t add any of those until the end, and test it on a small cupful first, to make sure it combines.

  9. I love celery soup but the milk keeps burning on the base of the morphy richards soup maker very frustrating. Any ideas on how to avoid this happening?

    1. It very rarely happens with mine, but I tend to saute my onions in my soupmaker, so perhaps the oil coating helps to reduce the potential to burn to the base. What kind of soupmaker do you have? I mostly use a kettle design.

      Never ever had boiling water or hot stock to soup maker! It sets off the fuse. I had to replace mine for this very reason. It seems to be practice to add stock cube (crumbled) into cold mixture.

  11. Just tried your mushroom soup recipe in our new Morphy Richards soup maker, with sate function. Used chestnut mushrooms and sautéed leek and onion first. Absolutely delicious. Will be trying the rest of your recipes. Many thanks for sharing them

  12. I had 2 big leeks that needed using up so with 400g of chopped leeks I reduced the amount of potatoes to 300g and the recipe still worked a treat. Dense and creamy and very, very delicious! Many thanks!!!!!!

  13. Just received my soup maker this week and love your recipe ideas. I am making cauliflower and Stilton soup and have put all ingredients in, including the Stilton. 1 head of cauliflower, 1 onion, sautéed first, then added 1 potatoe, 100gr of Stilton 2 cloves of garlic and 2 veg cubes and some pepper. Will see how it turns out

  14. I added stilton and creme fraiche after the cauliflower etc had finished the 20 minute programme. Crumble the stilton in, it melts quickly and easily. Delicious and non stick.

  16. Hi ScottishmumI have made the Leek and Potato soup as specified and added the cream it looks and tastes great, I did it on the chunky setting and blended after to my consistency . If I made mushroom soup could I add the cream as I did with the Leek/Potato soupDougie

    1. Yes, you could add the cream in the same way for mushroom soup, but remember to reduce the other liquid by the same amount for that recipe. You can’t go over the maximum level for your own soupmaker.

      Or you could just add some in at the end and give it a stir once your soup is at the serving stage.

  18. I have just bought a soup maker and want to make the leek and potato do i put the cream in at the begining or stir or in at the end

    1. For this recipe, I put the cream in with the other ingredients, but if I were planning to freeze the soup, I would leave it out and just add it at the serving stage.

    1. Hi, I’m sorry, I wouldn’t know which setting would be smooth in your soup maker. If you search online for your brand of soup maker, hopefully you will be able to find out that way.

  22. Have made broccoli and Stilton and cauliflower and Stilton several times. I put the Stilton in at the end after the -21 minutes, it softens with the heat do the contents. Delicious.

    Cheese seems to ‘stick’ to the base. When this happens, the electricity cuts out so you stir up and start again. That’s why I find it best to add cheese after the timing has ended.

  23. Is it possible to make cauliflower and Stilton soup in the Morphy Richards Soupmaker?

    1. I can’t see why not. We’re not stilton fans, so that isn’t one I would try with the cheese content. I’d be tempted to make sure the stock went in first and the cheese almost last and gave it a good stir before setting the machine on. I’ve been tempted to try using cake release spray on the inside of the pot for ingredients that might stick, but I’m not sure it would help with liquid heat.

Perfectly simple hearty recipe for a quick warming supper after work or a long walk, extra special with some grated gruyere or cheddar on top & a crusty roll with warm butter or a french baguette slice with garlic as a crouton on top! Top marks for getting us all to use that xmas kitchen gadget which goes unrecognised but is SO useful! Many thanks! Andy x

    1. Anything that gets our gadgets used is a good thing. I have my share of unused ones, but my soupmaker isn’t one of them.
