Boil potatoes, loosely mash with some butter (not to mashed potato creamy state). Mash in some corned beef, and serve with beans, oatcakes, ricecakes or beetroot.

That is exactly how I make it! no added onion, no dicing. Pure corned beef mash. I tend to mash it a bit more though. Then I either have it with beans or gravy. I also stick it in the oven too for a bit if I have time so the top crisps up š mmmm
