I have a fantastic standby dish for making when I am in a major hurry and don’t have very much left in the fridge or freezer. It’s simple, easy and is ready in less than half an hour for serving up. What do I do, make pasta and throw anything that I have in the fridge into it. All my boys love pasta and eat it with much gusto, which is totally approved of by mum. DH on the other hand only likes things that have dead animals and lots of pastry in them, and tends to call my pasta dishes “slops”.
Today was a standby day and the pasta was as quick and easy. Kids and I had Mummas Pasta and Dad had his slops.
First
I emptied a 500g bag of pasta into a nice big pasta pot. (I have a fab one with the holes already in the lid which makes for easy draining).
Second
I added frozen peas, onions and garlic, simmered for approximately 20 minutes,drained the pasta, refilled the pot with boiling water, stirred and drained again.
Third
I added two 500g cartons of passata (pureed tomatoes), 1 carton of cream, heated and stirred.
Hey presto – mummas pasta of today, with some thyme sprinkled on the top for pretty decoration. And there is still enough left over in the fridge for tomorrows lunch.
